Trabzon’da Yaşayan Tüketicilerin Geleneksel Gıda Algıları

Summary
Yaşam standartlarının yükselmesi ve artan bilinçle birlikte tüketiciler daha sağlıklı ve lezzetli olduğunu düşündükleri gıdalara yönelmişler buna bağlı olarak geleneksel gıdaların önemi artmıştır. Bu çalışmanın amacı; Trabzon ilinde yaşayan tüketicilerin geleneksel gıdalara yönelik algılarını belirlemek ve yöredeki geleneksel gıdalara dikkati çekmektir. Araştırma, Haziran-Eylül 2015 tarihleri arasında Trabzon il merkezinde yaşayan 15 yaş üstü 390 tüketiciyle gerçekleştirilmiştir. Ayrıca konuya ilişkin literatürde yer alan diğer çalışmalardan yararlanılmıştır. Verilerin değerlendirilmesi için SPSS 20.0 paket programı kullanılmıştır. Araştırmaya katılan tüketicilerin cinsiyet oranları Erkek:% 47,7, Kadın:% 52,3, medeni durum oranları ise Evli:% 52,1, Bekar:% 47,9’dur. Tüketiciler özellikle tarih, kültür, miras, yöresel, özgün, doğal ve sağlık gibi anlamlara gelen ifadelere güçlü bir şekilde katıldıklarını ifade etmişlerdir. Tüketiciler geleneksel gıdaların öneminin yeterince anlaşılamadığını ve tanıtılmadığını düşünmektedir. Elde edilen sonuçlar literatür bilgilerine benzemektedir. Tüketiciler geleneksel gıdaları, tarihin ve kültürün ayrılmaz bir parçası olarak kabul etmektedirler. Geleneksel gıdaların yeni nesillere aktarılması, daha güvenli gıdaların üretimi ve ticari bir kazanca dönüşebilmesi için geleneksel gıdalar gün yüzüne çıkarılmalı ve koruma altına alınmalıdır.

Abstract
Thanks to high living standards and an increased awareness, consumers tend to buy healthier and tastier foods, which has increased the importance of traditional foods. This study aims to determine the perceptions of the consumers in Trabzon regarding traditional foods and draw attention to the traditional foods of the region. The study was conducted with 390 consumers living in Trabzon whose ages were over 15 between June and September in 2015. The previous studies in literature were also utilized. SPSS 20.0 packet software was employed to evaluate the obtained data. Of the participants, 47.7% were male, and 52.3% female while 52.1% were married, and 47.9% single. The consumers stated that they strongly agreed with the expressions referring to concepts such as history, culture, heritage, localness, authenticity, naturalness, and health. The consumers think that traditional foods are underestimated and are not promoted thoroughly. The obtained results are consistent with the literature. The consumers consider traditional foods as indispensable parts of history and culture. Traditional foods should be revealed and protected in order to hand traditional foods down to the next generations, produce safer foods, and turn such foods into commercial income.
