Summary
Teknolojik gelişme, ekonomik ve sosyal refahın artması tüketicilerin büyük çoğunluğunun gıda tüketimi üzerine olan hassasiyetini arttırmış ve satın alma davranışlarını değiştirmiştir. Bu çalışmada, Tokat Merkez İlçede yaşayan tüketicilerin gıda tüketimi, davranışları ve bunları etkileyen faktörlerin belirlenmesi, gıda güvenliği konusunda bilinç düzeylerinin ortaya konulması amaçlanmıştır. Araştırma kapsamında veriler, 401 hane ile yapılan tüketici anketi aracılığıyla toplanmıştır. Tüketicilerin, %68.6’sının gıda güvenliği kavramını duyduğu, %31.4’ünün ise gıda güvenliği kavramını duymadığı saptanmıştır. Tüketicilerin gıda ürünleri satın alırken daima en fazla son kullanma tarihine baktıkları tespit edilmiştir. Ayrıca gıda güvenliğiyle ilgili bilgileri en fazla radyo-televizyon programlarından edindikleri ve gıda satın almada en çok TV reklamlarından etkilendikleri ortaya konmuştur. Tüketicilerin %75.8 gibi önemli bir kısmı, güvenilir gıda için fazladan ödeme yapmaya razı oldukları belirlenmiştir. Gıda güvenliği kavramını duyanların profillerini etkileyen değişkenleri belirlemek için binary logit analizi uygulanmıştır. Buna göre yaş grubu, eğitim düzeyi, gelir ve annenin çalışma durumu, gıda güvenliği kavramının duyulmasında önemli değişkenler olarak saptanmıştır.

Abstract
Developments of technology, economy and social wealth increased most of the consumers’ sensitivity about food conumption and changed their purchasing behaviours. This study aims to determine Tokat Central county consumers’ food consumption, behaviours about food consumption and factors affecting both of them and present the consumers’ conscious level about food safety and evaluate about it. During thesis research, data were collected from consumer polls which are implemented to 401 households. It is obtained that %68.6 percentage of household consumers heard someethings about food safety term while %31.4 percentage didn’t hear anything about the term. That household consumers are generally looking at expiration date on food products while purchasing them was observed. Addionally, it is determined that in most cases, consumers are obtaining information on food safety from Radio or TV programs and they are mostly affected from TV advertisements when making decions about food product purchasing. An important percentage of consurmers amounting %75.8 percentage indicated that they can have additional payment for safe food. To determine factors affecting profiles of consumers hearing food safety, binary logit analysis is used. According to this; age group, level of education, income and mother’s working condition are defined as the significant factors in hearing of food security term.
