Summary
Helal gıda, gıda maddelerinin üretimden tüketime, yani ürünün üretildiği yerden sofraya gelene kadarki süreç içerisinde uygulanan bütün işlemlerin İslami kurallara uygun olarak gerçekleştirildiği gıdadır. Günümüzde çalışan nüfusun artması ve insanların yemek yapmak için zamanının kalmaması hazır gıda talebini artırmıştır. Hazırlanması kolay ve tüketilmeye hazır olan bu gıdaların raf ömrünü uzatmak için de gıda katkı maddelerinin kullanımı zorunlu hale gelmiştir. Bu katkı maddelerinin helal ya da haram olduğunu belirlemek için kaynağının tam olarak bilinmesi gerekmektedir ki büyük çoğunluğu ithal edilmekte ve birçok gıdanın üretim sürecinde kullanılmaktadır. Bu çalışmada amaç, Kahramanmaraş İli kent merkezinde yaşayan 383 tüketiciden anket yoluyla elde edilen veriler kullanılarak tüketicilerin helal gıda konusunda tutum ve davranışlarını belirlemektir. Bu veriler, tanımlayıcı istatistikler ve probit modelden yararlanılarak analiz edilmiştir. Analiz sonuçlarına göre, tüketicilerin %76,0’ının helal gıda hakkında bilgi sahibi olduğunu, ancak sadece %27,9’unun satın aldıkları ürünlerin helal gıda sertifikalı olmasına dikkat ettikleri belirlenmiştir. Tüketicilerin %54,6’sı helal sertifikalı bir ürüne fazla ödemeye razı olacağını ifade etmiş ve fazla ödemeye razı olacakları oranların ortalaması en yüksek %24,16 ile tavuk etinde gerçekleşmiştir.

Abstract
Halal food is the food which every step in production is done according to Islamic Rules. While most of goods are accurately known to be halal or not, more information is needed for the ones which are suspicious. The increasing working population and no remaining time to cook, have also increased the demand for convenience food. Using preservative substances and additives has become a must in order to prolong shelf life of these foods which are easy to prepare and ready to consume. We need to know the sources of these additives accurately in order to determine whether they are halal or not because most of them are imported and used in production process of many foods. The purpose of this study is to determine the attitudes and behaviours of the consumers at the city centre of Kahramanmaraş about halal food. The data of this study were collected through a survey with 383 consumers living in Kahramanmaraş. The data were analysed by means of descriptive statistics and probit model. According to the results, it is found that 76% of the consumers had knowledge of halal food but only 27.9% of them paid attention to halal food certified products during shopping. The results also showed that 54.6% of the consumers were willing to pay more money for a halal brand food. Consumers were willing to pay 24.14% more for halal certificated chicken meat.
