Abstract


Determination of Drying Performance and Color Change of Kiwifruit Using Image Processing Method
Within the scope of the study kiwi fruit was dried in slice thicknesses of 0.5 and 1 cm at the temperature of drying air of 60, 65 and 70 ºC. Experiments were carried out by Presica XM 10 SE model instant humidity measurement device. In order to observe the changes, the images were taken to be perpendicular to the slices at certain time intervals during drying. In the experiments, the drying efficiency of the kiwis at different temperatures, the color analysis of the product and the chemical changes in the product were determined and the field loss and HDF value were determined by the image processing method. When the drying process is examined, the shortest drying time is determined as 4 hours in the 0,5 cm thickness at 70 ° C, and the longest drying time is determined as 16 hours in the 1 cm thickness at 60 ° C. It was determined that the area reduction was close to 900mm2 in the image processing analysis. Negative values "a" represent the greenness of the product. There was no statistically significant difference between fresh and dried product at the temperature of 60 ° C drying air at 0,5 cm thickness. In experiments with kiwi, the temperature of the drying air was determined to be an important parameter in terms of the quality characteristics of the product.
