Abstract


Determination of Level of Chicken Meat Consumption and Consumption Pattern of Consumers in Şanlıurfa Urban Areas
This study was designed to investigate the level of chicken meat consumption and consumption pattern of consumers in Şanlıurfa urban areas. The database of the present study was made up by surveying the people representing different groups of standard of living. The survey was carried out between January and February, -2000. According to the results obtained among the f amilies investigated, while the consumption of chicken meat per person was 133 kg, this was 75.6 kg per family. The consumption of chicken meat varied -depending upon the people’s standard of living and the increase in the standard of living brought about more chicken meat consumption. It was also noticed that while 43.4 percent of the consumers bought chicken meat once a week, 34.3 percent of the consumers had once in every two weeks, 13.5 percent of them purchased once a month and 8.8 percent of consumers bought more than once a-week. In average, 60.2 percent of the consumers preferred to buy chicken as a whole. The ratio of the consumers preferred to purchase chicken as parts was 36.7 percent. The most preferred part of chicken was legs with preference of 50 percent of consumers This was followed by breast with 36.7 percent preference. 46.0 percent of the consumers who favour to buy chicken as a whole, want to have a medium size carcass. It was also noticed that there was a remarkable variations between the places where consumers bought chicken and many of the consumers (73.32 percent) preferred io buy chicken from the markets.
