Biochemical Aspects Of Honey Produced In Erzincan
In this study, we aimed to determine the suitability of 50 flower honey samples produced in Erzincan province according to Turkish Food Codex Communiqué on Honey. It was determined that flower honey of moisture content was varied between 16.9 % to 21,4 %, free acidity values were between 11.1-28.6 meq/kg, the value of diastase was 4.5-19.4, HMF (hydroxymethylfurfural ) values were between 1.5-47.8 mg/kg, sucrose values were between 0.1-15.3%, fructose+glucose values were between 49.5-77.9 % and fructose/glucose values were between 0.74-1.29. From 50 honey samples, 35 (70%) honey samples according to Turkish Food Codex Communiqu on Honey were found to be suitable in all terms of the criteria examined.
